About a third of the island is devoted to the manufacture of salt. I don't know the details, but it appears to work like this. You flood the land to a depth of about 18 inches. Then you wait. Later, you pile the salt up in huge mountains. Here, you can see the mountains and one of the dikes which is evaporating into... salt.
